Butter Chicken + Garlic Naan

It’s always been my dream to cook Butter Chicken, and I mean that in the cheeziest way possible!! I adore the dish, but most of the time I’m disappointed by the amount of serving I get when I go to Indian restaurants. So much sauce, very little meat. Well…I finally had the chance to make this dish and it didn’t disappoint, AND it was pretty simple to put together! I loved the complexity of the dish, with all the spices complementing the sweet/tangy tomato & creamy sauce. Definitely a dish super rich in flavor.

I made Garlic Naan from scratch as well, using my pizza stone and it was SOO delicious!!

Apple Crumb Galette

I love the organic feel of the galette… Organic because you’re not restricted to a pie pan, and you literally have to mold the pie crust dough around your filling.

This was a recipe that I stumbled upon in the recipes section of the NYT. I liked the idea of baking a galette, but didn’t like that there was no sugar crumble crust of some sort (I’m a sucker for it).

And the results… I LOVED. So yummy and easy to make. This is a very good tart apple pie – the crust stays really crunchy (compared to regular apple pies). So sooo good! I used apples that I just bought from the St. Lawrence farmer’s market, super fresh!

Make this and serve it with some heavy cream or whipped cream. Delish!!!

Buttermilk Pancakes + Meyer Lemon

My breakfast for today: buttermilk pancakes, meyer lemon curd, candied meyer lemon and whipped crème fraîche.

In other words, I’m still in denial about winter (hey, it’s not a cold December, right??)!

Meyer lemon always interested me, I always thought it was a fancy kind of lemon, which it kind of is – tastes like a cross between a lemon and an orange…and you also may have a bit of trouble finding it at your local grocery. But the taste, YUM!! I love lemons but these lemons I love as well, they’re a bit less sour and are smaller than regular lemons.

The highlight of this recipe was definitely the meyer lemon curd. WOW. What a delicious and creamy custard, I couldn’t stop eating it. Definitely was surprised by how good the meyer lemon tasted. YUM!!! I want to try making lemon bars with them next!!

Beef Massaman Curry (แกงมัสมั่น)

Colder weather calls for staying in and eating lots and lots of carbs (as much as I hate to admit it).

Today I’m making Beef Massaman Curry, a Thai dish that I LOVE because of the lovely blend of spices (cardamom, clove, cinnamon, star anise, etc), the coconut milk and the peanuts. It’s on the milder end of the curry dishes, so not too hot at all. For this recipe I used beef shank, the part of the beef that you use for Osso Buco, and it was so DELICIOUS!!!!! Ditch the lean “stewing beef” and opt for beef shank which adds a really rich flavor. It tasted like I was at a legit Thai restaurant, not going to lie. I tossed in shallots and potatoes as well, and it blew my mind.

This was also the first time I’ve ever made this recipe, and it was really easy. Just a few hours of simmering in my cast iron pot, and you get an amazing curry dish – which you can easily pair with rice. MAKE THIS ASAP!!

Pecan Butter Tarts

I love butter tarts!! They’re so delicious, sweet, and gooey. The best ones I’ve had by far was on a road trip to Port Elgin – my boyfriend and I passed by a small town called Fergus and picked some up.

Man, they were so good, the crust was so buttery and the filling was runny, and filled with pecans. Obviously, I tried recreating this yummy Canadian treat. The results were SO GOOD! And it’s super easy to make too.
