Ahi Tuna Poké

I was SO SPOILED!! The first poké that I ever tried was at Smorgasburg, NYC, and the moment the fish touched my lips I was sent straight to heaven. No lie. Mostly because the fish was REALLY fresh. Unfortunately we can’t get that kind of fish too easily here in Toronto, and if you can, it’s super expensive.

AH WELL. That doesn’t stop me from making my own poké! In fact mine was pretty legit – I used the vacuum sealed sushi grade ahi tuna I had in the freezer, plus some BOMB shoyu I whipped up. I taste tested a recipe that called for sesame oil + soy sauce, vs. a recipe that had some fresh juices (carrot, lemon, orange) + soy sauce, and the latter tasted really delicious. The citrus and soy sauce tasted similar to ponzu and went really well with the fish.

Did I mention this recipe was super easy??

Whatever you mix with your poké is really up to you! I added sweet onion, green onion, avocado, sesame seeds, macadamia nuts, shichimi togarashi, with fried wonton on the side. The only ingredient that’s a bit more difficult to find is the red Hawaiian sea salt. Kosher will do fine, but the red sea salt just adds a nice earthy flavor.

Summer Pasta Dish: Pasta + Tomatoes

WOW. Who knew that simple ingredients could create an amazing, solid pasta dish?!

Damn, this was so delicious that I couldn’t stop eating. All you need is pasta, some decent olive oil, fresh basil, garlic, really good cherry tomatoes and you’ve got yourself a perfect summer dish!! It’s a good thing I picked up a bunch of cherry tomatoes from the farmer’s market – man it really added nice sweetness, perfectly complemented with the olive oil (infused with garlic). The basil topped off at the end just adds another kick, an extra level that makes this taste so fresh!

It’s also so easy to whip up – you can do this pasta dish in 10 minutes, or even less! And I do love parmigiano cheese but you definitely don’t need it! Trust me, it will drown out the simple flavours.

Love this so much… I’m going to get fat and it’s not even winter yet!

5 steps to the best Homemade Pancakes

These are the best homemade pancakes ever. Yup. I said it.

What I love about this recipe is that it’s so delicious and light, with the perfect amount of sweetness. It’s super easy to make, but you need to know a few key points before you can make the best pancakes (EVER):

  1. All you ingredients need to be room temperature (even the buttermilk and egg). I find that a cold batter does not do well with a hot cast iron skillet.
  2. You need fresh baking soda and baking powder, or else it won’t rise well or taste good.
  3. Don’t overmix your batter (medium lumps) – use a fork.
  4. Let your batter rest 5 minutes after mixing.
  5. Use a cast iron skillet if you can!

My breakfast for today: buttermilk pancakes, meyer lemon curd, candied meyer lemon and whipped crème fraîche.

In other words, I’m still in denial about winter (hey, it’s not a cold December, right??)!

Meyer lemon always interested me, I always thought it was a fancy kind of lemon, which it kind of is – tastes like a cross between a lemon and an orange…and you also may have a bit of trouble finding it at your local grocery. But the taste, YUM!! I love lemons but these lemons I love as well, they’re a bit less sour and are smaller than regular lemons.

The highlight of this recipe was definitely the meyer lemon curd. WOW. What a delicious and creamy custard, I couldn’t stop eating it. Definitely was surprised by how good the meyer lemon tasted. YUM!!! I want to try making lemon bars with them next!!

Dominique Ansel’s Banana Bread

I LOVE this recipe. It’s just too good!!

And what I really love most about it is that you can put everything together in under 5 minutes (minus the baking time).

Naturally, when I decided to make banana bread, I knew it couldn’t be just any on Allrecipes… it had to be Dominique Ansel’s (aka the cronut inventor).

There’s something really comforting about fresh banana bread – I love the smell of it cooking in your oven. Dominique’s recipe is rich, buttery and full of banana, YUM!! The top crust of the bread has a nice crunch to it too. Make this ASAP!
