The best thing about sweet cream and cookies + recipe!

I’ve always loved cookies and cream, one of my fav go to ice cream flavours apart from chocolate chip cookie dough. Used to love the version by Baskin Robbins but…. it just wasn’t the best – until I tried Ample Hills Creamery!!

This recipe is a game changer. No lie. I’m eating it out of the tub right now, and it’s legit crack. I first tasted Sweet Cream and Cookies last summer in NYC, at Ample Hills Creamery. Still remembering that hot day in Brooklyn, and how I declared it the best cookies and cream that ever touched my lips!! Now what makes this ice cream are the huge chunks of Back to Nature cookies, a less sweet version of Oreos that’s sort of an eyeopener (I never knew you existed!!).

Recreating the ice cream at home was very easy – took the recipe straight from their cookbook! It calls for Walt’s Dream base, a creamy luscious vanilla ice cream base made from fresh milk and cream, skim milk powder and organic cane sugar. The recipe itself stresses that they recommend the organic stuff; but I was only able to find organic sugar from Bulk Barn. SO DELISH!!

Oh man, diet starts tomorrow.

I made this absolutely delish skillet chocolate chip cookie, which my mom and I ate wayyy too much of (and slightly regret). What I totally dig about this is that it comes out super hot from the oven, and you eat it straight from the skillet… WITH ICE CREAM! Yep, my diet went downhill after that first gooey bite, melted chocolate and caramel goodness (I used a lot of brown sugar).

This pizookie copycat recipe was pretty good and so simple to make! All that’s missing is a bit of chocolate drizzle on top… Man! I gotta stop now.

Shiratama Sundae ($8.00)

OK LAWD. The matcha soft serve ice cream here is no joke. Meaning, I really really need one whole tub of the ice cream ASAP!!! I love all things matcha and this far exceeded my expectations (yep, it’s better than Uncle Tetsu). TBH, the size of the cup itself was pretty small, and I’m guessing it’s pricey because they import some ingredients from Japan. I got the Shiratama Sundae which was pretty dope but thought that the ice cream to red bean ratio was a bit off – the red bean’s sweetness overpowered the matcha. The rice dumplings didn’t add any value. Overall the standout here is the soft serve.

I read that some people lined up for an hour and a half to two hours for this… It’s not worth the wait. Go when there are no lines and pick up a matcha cream puff (which I didn’t get because I just got my wisdom teeth pulled, boo).

Brown Butter Pecan Ice Cream

Brown butter pecan ice cream.

It doesn’t get any more lavish and indulgent than this!! Brown butter essentially means cooking butter to the point where the water in the butter starts to evaporate and the solids start to brown… Resulting in an AMAZING nutty and subtly sweet butter flavour.

Now take that flavour and combine it with a creamy ice cream base that is rich and at the same time has an amazing texture. Words can’t even describe!!!

Yeah, after the first bite of the brown butter ice cream (and the lightly toasted pecans) I had to stop, head in hand, to take in everything.

I was shocked that my ice cream had a texture that was almost exactly what I’d buy in the store. Pretty thick and creamy. The main difference though is the freshness of ice cream that’s made at home – it’s incomparable to the frozen pints you can buy at the supermarket.

Make this. Now. (And don’t forget to take a walk around the block after).
