Summer Pasta Dish: Pasta + Tomatoes

WOW. Who knew that simple ingredients could create an amazing, solid pasta dish?!

Damn, this was so delicious that I couldn’t stop eating. All you need is pasta, some decent olive oil, fresh basil, garlic, really good cherry tomatoes and you’ve got yourself a perfect summer dish!! It’s a good thing I picked up a bunch of cherry tomatoes from the farmer’s market – man it really added nice sweetness, perfectly complemented with the olive oil (infused with garlic). The basil topped off at the end just adds another kick, an extra level that makes this taste so fresh!

It’s also so easy to whip up – you can do this pasta dish in 10 minutes, or even less! And I do love parmigiano cheese but you definitely don’t need it! Trust me, it will drown out the simple flavours.

Love this so much… I’m going to get fat and it’s not even winter yet!

Orecchiette with Broccoli Rabe and Italian Sausage

WOW. This is probably one of my favourite pastas. Hands down!!! I REALLY wanted to eat two large bowls of this. It was so hard not to…but I’m thinking of that bikini bod. Seriously, I was eating this so fast that I just had to slow down!

I just love the simplicity of the dish and how fresh this tasted. The mild Italian sausage I picked up from St. Lawrence Market nicely complemented the broccoli rabe (which didn’t taste bitter at all). I topped the dish with lightly toasted breadcrumbs and parmigiano reggiano. The breadcrumbs added an amazing crunch and texture… man my mouth is watering just typing up this blog!! Make this ASAP!!

Malfalde ai Funghi ($17.50)

Located at Portland and King in a repurposed auto garage (who knew?!) is Gusto 101, one of Toronto’s classic Italian restaurants. First off, service was good, my best friend and I had a very attentive server who constantly refilled our water and gave us bread (we asked for seconds!!). Our dinner started with lovely focaccia bread, olive oil and balsamic vinegar.

I ordered the Mafalde ai Funghi, one of Gusto 101’s more popular dishes: mafalde pasta with truffle cream sauce, portobello, porcini and oyster mushrooms. Gusto 101 really nailed the al dente texture of the pasta. I LOVE when restaurants get that right. I enjoyed the balance of the sauce, creamy with a light mushroom flavor and a slight hint of truffle. The only downside to my meal was that my pasta wasn’t hot, it was more on the lukewarm side. Womp womp. Halfway through my pasta I lost interest in finishing it because of this. It’s all good though, the great service made up for the overall experience (slightly).

Butter Chicken + Garlic Naan

It’s always been my dream to cook Butter Chicken, and I mean that in the cheeziest way possible!! I adore the dish, but most of the time I’m disappointed by the amount of serving I get when I go to Indian restaurants. So much sauce, very little meat. Well…I finally had the chance to make this dish and it didn’t disappoint, AND it was pretty simple to put together! I loved the complexity of the dish, with all the spices complementing the sweet/tangy tomato & creamy sauce. Definitely a dish super rich in flavor.

I made Garlic Naan from scratch as well, using my pizza stone and it was SOO delicious!!

Spicy Thai Basil Pork Stir Fry: Pad Kra Pao (ผัดกะเพรา)

I first had this dish way back at Khao San Road, one of the popular Thai restaurants here in Toronto. Stir fried pork, rice, egg – oh so reminiscent of some of the Filipino dishes that I grew up eating back in the Philippines (aka a diet of meat, rice and no veggies).

But… I fell in love with this dish a bit more recently at Pai, which really is the better of the two and one of my favourite restaurants, no lie (I think I’m there once a month). Their pad kra pao has PORK BELLY in it.

I decided to try and make this glorious dish since I crave it all the time. And the results were INSANE. I looove the combination of tart and spice. Have it for breakfast, lunch or dinner, with a few slices of cucumber if you’re feeling really guilty.
