5 steps to the best Homemade Pancakes

These are the best homemade pancakes ever. Yup. I said it.

What I love about this recipe is that it’s so delicious and light, with the perfect amount of sweetness. It’s super easy to make, but you need to know a few key points before you can make the best pancakes (EVER):

  1. All you ingredients need to be room temperature (even the buttermilk and egg). I find that a cold batter does not do well with a hot cast iron skillet.
  2. You need fresh baking soda and baking powder, or else it won’t rise well or taste good.
  3. Don’t overmix your batter (medium lumps) – use a fork.
  4. Let your batter rest 5 minutes after mixing.
  5. Use a cast iron skillet if you can!

Brown Butter Pecan Ice Cream

Brown butter pecan ice cream.

It doesn’t get any more lavish and indulgent than this!! Brown butter essentially means cooking butter to the point where the water in the butter starts to evaporate and the solids start to brown… Resulting in an AMAZING nutty and subtly sweet butter flavour.

Now take that flavour and combine it with a creamy ice cream base that is rich and at the same time has an amazing texture. Words can’t even describe!!!

Yeah, after the first bite of the brown butter ice cream (and the lightly toasted pecans) I had to stop, head in hand, to take in everything.

I was shocked that my ice cream had a texture that was almost exactly what I’d buy in the store. Pretty thick and creamy. The main difference though is the freshness of ice cream that’s made at home – it’s incomparable to the frozen pints you can buy at the supermarket.

Make this. Now. (And don’t forget to take a walk around the block after).

Damn you strawberry shortcake! You evil, buttery demon.

One moment I was eating it, and then 5 seconds later the entire strawberry shortcake was GONE.

I blame it on it’s lightness. And most probably because it tastes like a cross between a slightly crunchy biscuit and pillowy soft yellow cake. READ: butter (my favourite).

That, combined with the whisky vanilla bean whipped cream AND the fresh handpicked Ontario strawberries… I have no words.

Having never made strawberry shortcake before, this is a perfect summer treat!!! Make this while strawberries are in season!

THE ONLY Buttermilk Biscuit Recipe You’ll Ever Need

The best way to start off the day. Flaky, amazing, buttery goodness of freshly baked biscuits.

Served with jam and butter? The best combo.

Some gravy and sausage? EVEN BETTER.

Look at the flakiness of those babies!

You only get that biscuit height when the cold butter in the mixture melts in the oven, while at the same time being pushed upwards by the baking powder and baking soda.

Slightly crunchy on the outside, but buttery soft on the inside.

That alone makes labouring in the kitchen in the morning SO WORTH IT.

I’ve seen other recipes that don’t have the same kind of flaky look.

Don’t even bother with those.
