I’ve been flip flopping lately between a keto diet and normal eating habits, getting ready for my big Philippine beach trip coming up! Big problem: I always love chocolate but I had a huuuge craving for it and found it crazy hard to resist baking. So I’m sharing with you one of my favourite recipes, Chocolate Peanut Butter Cup Cookies, and these super awesome Keto Fudge Brownies!!!

Chocolate Peanut Butter Cup Cookies

Who doesn’t love the combo of chocolate + peanut butter? Such an amazing combination, and works SO well with these cookies. The chocolate cookie itself is made from dutch pressed cocoa powder, and is not too sweet at all. Such a nice contrast to the gooey peanut butter center. If you make this, you’ll be in danger!! Seriously, you won’t be able to eat less than five pieces. The recipe was crazy easy to make, you don’t even need a stand mixer for it. Click the name for the link to the recipe!

Keto / Gluten Free Fudge Brownies

If you’re going to make brownies while on a hard keto diet, THESE ARE THE ONES YOU MAKE! Yes, all caps on this crazy amazing brownie, with rich dark chocolate flavours, and made with almond flour. Of course, the texture is not the same as a brownie you would make with all purpose flour. It’s a bit dense especially when it cools down, it hardens (so I recommend you reheat it first). Aside from that, the flavours are really amazing, rich chocolate that’s not too sweet (I used Swerve instead of sugar), and I topped mine with the walnuts and sea salt top… my god! I rationed this as my nightly treat and wish I had some more right now!! Click the name for the link to the recipe!

Tested and Perfected Rice Krispie Squares

Rice Krispie Squares: so easy to make, but so easy to mess up. I sadly was only introduced to them in the past year, when my coworker brought them in to the office… LIFE CHANGING! Yeah, really. Because before then I’ve only tried the packaged versions, which if you’ve tried the freshly made ones, can’t really hold a candle. So in my first few attempts to make them, I made sure that it was gooey and not dry, with some melty marshmallows in each square.

Now the real key to this recipe, and my coworker Liz would highly recommend, is to add a bit of vanilla. I did experiment with more expensive vanilla extract and regular vanilla and couldn’t taste the difference at all!

The recipe after the jump is my tried and true recipe, having made over 4 batches of them for our bake sale at the office. It’s pretty much perfection! The aluminum foil lining is a MUST to easily remove your squares from the pan.

Clean Eating with Pan Seared Lemon Rosemary Salmon

Aaaand I’m back with the recipes! Currently I’ve been pretty much overusing the method of pan searing, then placing the dish in the oven (steak, pork chop, salmon etc). I really LOVE the colour you get when you sear! I also find that when you pop it in the oven to cook, the texture of your meat can be controlled better than frying it completely, which can result in tougher meat.

I’ve been working on my summer bod, which really means sleeping in the gym and working out 24/7. Truth is, weight loss is mostly about what you eat, and as hard as it’s been – I’ve been doing pretty well! Best way to stick to a diet is to make sure you still eat delicious meals… and this lemon rosemary salmon is one of my faves!! Super easy to make and healthy too!! I served this with roasted sweet potato, sauteed brussel sprouts with bacon and pine nuts and roasted zucchini. MMMMM!

Double Layered Nachos + Pico De Gallo

Oh maaaan. These nachos were really, really legit. I inhaled these… Couldn’t stop eating them!!!

Crisp tortilla chips with beef that had just the right amount of heat, plus a mix of melted sharp cheddar and monterey jack and finally topped with fresh pico de gallo and sliced avocados! My mouth is watering just typing this up. These are definitely the perfect Superbowl snack!

You really need to DOUBLE layer your nachos. Yup, scatter a bit of tortilla chips, cheese and beef to a baking tray, then do that all over again. Really makes a huge difference in getting cheese and beef to most chips.

For this recipe I ditched the Tostitos for something a bit different, the brand I picked up was called La Vista Nachos. So delicious and added a bit more authentic flavour. I also made my own taco seasoning, super easy stuff if you have the ingredients in your pantry. Also passed on the mozzarella and used monterey jack, which tasted better when the nachos cooled down (vs the hard mozzarella). Perfect to go with a glass of Coke – seriously, water doesn’t work with this.

Ribeye with Roasted Garlic

Ahhh ribeye. One of my go to easy dishes to make under FIVE minutes! I love cooking this on a cold day with some mashed potatoes and a (really optional) side of veggies. 

What we have here is a beautiful ribeye really good marbling, cooked rare. I’m not about that ribeye + herb life. Yep, tried that before, but TBH a ribeye needs to be savoured, and I just prefer the taste of beef without the herb flavours. All you really need are salt, pepper, butter and garlic – again simple is best!!

Just use this recipe and just stick to garlic!
