I’ve been flip flopping lately between a keto diet and normal eating habits, getting ready for my big Philippine beach trip coming up! Big problem: I always love chocolate but I had a huuuge craving for it and found it crazy hard to resist baking. So I’m sharing with you one of my favourite recipes, Chocolate Peanut Butter Cup Cookies, and these super awesome Keto Fudge Brownies!!!

Chocolate Peanut Butter Cup Cookies

Who doesn’t love the combo of chocolate + peanut butter? Such an amazing combination, and works SO well with these cookies. The chocolate cookie itself is made from dutch pressed cocoa powder, and is not too sweet at all. Such a nice contrast to the gooey peanut butter center. If you make this, you’ll be in danger!! Seriously, you won’t be able to eat less than five pieces. The recipe was crazy easy to make, you don’t even need a stand mixer for it. Click the name for the link to the recipe!

Keto / Gluten Free Fudge Brownies

If you’re going to make brownies while on a hard keto diet, THESE ARE THE ONES YOU MAKE! Yes, all caps on this crazy amazing brownie, with rich dark chocolate flavours, and made with almond flour. Of course, the texture is not the same as a brownie you would make with all purpose flour. It’s a bit dense especially when it cools down, it hardens (so I recommend you reheat it first). Aside from that, the flavours are really amazing, rich chocolate that’s not too sweet (I used Swerve instead of sugar), and I topped mine with the walnuts and sea salt top… my god! I rationed this as my nightly treat and wish I had some more right now!! Click the name for the link to the recipe!

Christmas in a Cookie + Baking with Canola

I’ve been bad. Sadly, I’ve been cooking with vegetable oil and shortening, which I recently discovered was not the best option for your heart!!

Last week, I attended a really awesome culinary workshop at the Loft on Geary, hosted by Canola Eat Well. They’re a joint partnership between Alberta, Saskatchewan and Manitoba Canola Growers, that aims to inspire us to use canola oil in the kitchen by connecting us to the stories of Canadian farmers. I even got to speak first hand to one of them, a very lovely lady from Alberta, Jeannette (to my right in the picture below). Let me tell you I am CONVERTED! Who knew that Canola is Canadian and grown for us by over 43,000 family farmers on the Canadian Prairies?! I use vegetable oil really frequently to deep fry breaded pork chop, pork belly and chicken, but never again!!

Aaaaand here I am with my favourite thing about Christmas (it’s really the other way around…kidding)!! Also, I’m pretty sure I look 17 years old in this photo, WOW!

Sooooooo here’s the deal: Canola oil, which should be your local Canadian choice, is heart friendly because it’s a good source of Vitamin E and K, super low in saturated fats (half of olive oil) and is packed with Omega 3 fats (helps protect against heart attacks and strokes). It’s also has a pretty neutral taste, so it allows the flavours in baking and cooking to shine, AND also makes your baked goods moist. Trust me, we baked a bunch of goodies with canola oil at the workshop, and they were outstanding!!

Here’s a handy canola oil baking conversion chart! I didn’t know this either but it’s awesome for deep frying (McDonald’s even uses it), because it can fry up until 468F.

Well, you’re going to LOOOOVE these Chocolate Ginger Jewels I just baked. Chef Claire Tansey is the mastermind behind this perfect cookie, which you need to bake this holiday season. This is literally Christmas in a cookie, with the cinnamon and ginger spice giving me all the holiday feels. UGH! To-die-for!!

At first bite it’s slightly crispy, but inside it’s super soft and chewy (thanks to the canola oil), bursting with ginger spice, warm cinnamon flavours, and extra sweetness from the chocolate (I used chopped up Valrhona chocolate feves). My eyes literally rolled to the back of my head when I first tried it because it so epic. Especially when you eat them freshly baked from the oven… it’s so dangerous! I’m going to have to work out extra hard today after the 10 cookies I just ate!!!

Don’t sleep on this recipe. It’s so easy and quick to whip up too!

Double Chocolate Crinkles

LAWD. OK…..Imagine a gooey chocolate explosion of a brownie, but in cookie form?!? I die!! Yes, I’m late to the game since Christmas and the time for cookie swaps have already passed – but damn this recipe for double chocolate crinkles is really GOOOD!

Here’s all you need to remember in order to make bomb crinkles:

  1. Refrigerate the batter overnight. 
  2. Roll the chocolate balls in plain sugar first before powdered.
  3. Use really good quality cocoa powder.
  4. Don’t overbake!!

Oh man, diet starts tomorrow.

I made this absolutely delish skillet chocolate chip cookie, which my mom and I ate wayyy too much of (and slightly regret). What I totally dig about this is that it comes out super hot from the oven, and you eat it straight from the skillet… WITH ICE CREAM! Yep, my diet went downhill after that first gooey bite, melted chocolate and caramel goodness (I used a lot of brown sugar).

This pizookie copycat recipe was pretty good and so simple to make! All that’s missing is a bit of chocolate drizzle on top… Man! I gotta stop now.

Peanuttiest Peanut Butter Cookies

I’m always so disappointed when I buy peanut butter cookies at a store (read: Starbucks). They’re always SO dry! That’s mainly the reason why they aren’t my go-to cookie flavor.

Well, these are different.

They’re the peanuttiest peanut butter cookies you’ll ever eat, hands down. Super moist, I ate a piece in 5 seconds. I love the balance of salty, just the right amount of sweet flavours – plus the roasted chunks of peanuts add an amazing depth of flavor to the cookie. I also used organic natural peanut butter so I can control the sweetness.

I adapted this recipe from Bon Appétit. Strangely I’m not an expert at baking, it’s a hit or miss sometimes (it never turns out like the picture!!!) but these turned out well. Steaming the cookies was an interesting method (and it worked), but I would probably the pan with water half way through baking so the cookies crisp up some more.

My mouth is watering just writing this blog post. I need more!!
